Would this be ok to Crossfire 2 x 2gb 6950 HD's with an i7 2600k, asus sabertooth and 3 Sata hdd's ?

I would say to be on the safe side as they are all expensive items, a 1000W+ PSU just to be sure you do not underpower anything.
